I am in love with many things: my God, husband, son, my fiction addiction that is growing, and the all important FOOD ADDICTION. I love baking for friends, family, and co-workers. Love trying out new recipes and messing with them to meet my tastes. I am not afraid to fail at a recipe, but love the looks on faces when one is a winner. Being a wife has made me realize just how important family and togetherness is. Being together means good food is in order. And good food is what makes me, well, me! With a sensational appitite for family and life in general, I bid you to stay a while. Laugh, cry, relate, but most importantly, LOVE.

1+1+1= A Smart Brain and a Full Belly

1:A: A Taste of Fame: The Potluck Catering Club

I have really come to love these characters.  Vonnie, Lisa LeAnn, Donna, Evie, Lizzie, and Goldie are chosen to be apart of a reality show called The Great Party Showdown.  The girls must really pull together to make it on the streets of New York, and survive the elimination round against some no good participants.  This story is one of togetherness, forgiveness, and real friendship.

I actually cried during this book.  I don't know if it was the hormones that have seemed to have taken over my body, or that it was JUST that great of a story.  All the books so far seem to be easy and fun reads.  It's easy to get caught up in the story lines.  If Shepherd and Everson want the reader to feel like the characters and imagine we are there with the girls of the PCC, then BRAVO! to them.  I'm a hooked Potlucker!
2: Dinner~ Sour Cream Enchiladas
OK, So yesterday I had NO IDEA what I was going to make for dinner.  I knew I wanted something chicken, yet had no chicken to thaw out.  I walk into the pantry and behold
*******canned chicken that we buy and never eat******
Well canned chicken is already cooked, so there we go!  Saves time and made so OH SO GOOD enchiladas.
*1/2 a medium onion
*2 cans chicken
*1/2 large tub sour cream
*1/2 small can green chilis
*10-12 corn tortillas(oh my goodness, CostCo carries corn tortillas in the frozen foods that you cook.  If you can get these, they are the best!!!!)
*oil to fry the tortillas in 
  1. Saute the chopped onion with some butter and a bit of oil, add both cans of chicken, shred, and cook till colored
  2. I added some seasoned salt to add some taste, but you won't need much
  3. take out chicken, add more oil to fry the tortillas
  4. put one tortilla in at a time, fry on both sides for about 1 minute, lay on a paper towel, put another one in the oil.
  5. fill the tortilla with the chicken, however much you would like, and roll the enchilada closed.  Repeat with remaining chicken and tortillas.
  6. stir together the sour cream and chilis and put on top of the enchiladas
  7. 350 degrees in the oven till warmed through, top with cheese, melt, and serve!   
3: Strawberry Sour Cream Cake
We are not a V-Day celebrating family.  Never have been.  This year has been a bit tough for Love and I, mainly me more than him.  I decided to make him a cake and try my hand at something new just for him.

~2 sticks softened butter
~1 1/4 c sugar
~2 tsp vanilla
~2 eggs
~1 c sour cream
~about 10-12 large frozen strawberries, put through a food processor, and pulverised
~2 c flour
~1/2 tsp baking soda
~1 tsp salt
~1 1/2 tsp baking powder

  1. In a stand mixer, cream butter and sugar together.  Add each egg one at a time.  Add vanilla, sour cream, and strawberries.
  2. Sift together dry ingredients and slowly add to the wet.
  3. butter and parchment paper 2- 9 inch round cake pans
  4. pour batter into pans, 350 degrees for 30 minutes, or till done by sticking a toothpick into them and coming out clean.
  5. set on a cooling rack and cool all the way before icing.
I used some red coloring and chocolate to pipe out the hearts.  And then Monk made one too!

I used a regular cream cheese icing on the cake.  What goes better than strawberries and cream cheese icing!?!?!?
